【摘要】 采用不同的聚乙烯保鮮膜對雙孢蘑菇進(jìn)行了包裝處理,研究不同包裝對其貯藏品質(zhì)的影響。結(jié)果表明,在(0.5±0.5)℃條件下,0.08mm、0.05mm和0.035mm的PE膜處理有效保持了菇體的含水量和VC含量,降低了呼吸強(qiáng)度和相對電導(dǎo)率的變化。綜合感官評分,以厚0.05mm的PE保鮮膜處理效果最為明顯,有效保持了雙孢蘑菇品質(zhì)。
【Abstract】 Effect of different packing bags on the quality of Agaricus bisporus during cold storage at (0.5±0.5)℃ was studied. The results showed that the treatment of different thickness of 0.08 mm、 0.05 mm and 0.035 mm PE could maintain content of water and VC, inhibit respiration rate and the change of relative electrical conductivity. According to sensory quality, the commercial quality and flavor were well kept using 0.05 mm PE.
